Lot Que is the brainchild of the owners of Lot One, Jaime Miles and Josh Timon. As the two of them tried to figure out what to put into the empty commercial space in the building they both knew it had to be another food concept.
Both started researching different franchises and potential food types and they kept going back to a love of both of theirs, barbeque. They started discussing this with the current kitchen team at Lot One and discovered many of the team members had either grown up in the south or had previous experience on the “circuit”. The idea of barbeque started to take shape as a true team approach.
With the change in how restaurants operate during Covid-19 restrictions, the business at Lot One saw a large increase in the takeout/delivery business and has sustained 15%-25% of our nightly revenue. We wanted a food that travels well, is appealing for catering, stays edible for days and barbeque is the answer.
